Typically topped with slices of char siew or shredded chicken, boiled or fried wantan and some leafy greens, wantan mee is a quick and balanced meal when done right - but there’s a catch. Most hawker stall variations of it include rather generous amounts of MSG and plenty of oil to avoid the noodles from clumping, which is why at Signature Market you won’t find any of that. What you will find is a 5-star dish of smooth, springy wholesome egg noodles soaked in a flavourful soup comprising seasoning made with dehydrated chicken meat and aromatics such as garlic and shallots.
