Recipe: Tomato Egg Drop Soup

A simple hearty soup with tomatoes and eggs.

INGREDIENTS:
- 2 large tomatoes, diced
- 4 cups of broth of your choice
- 2 eggs, well beaten
- 2 tablespoon cornstarch + 2 tablespoon of water
- 2 tablespoon cooking oil
- 1 tablespoon light soy sauce
- 1/2 tablespoon minced ginger
- pepper, to taste
- salt, to taste
- chopped green onion and coriander (optional)

INSTRUCTIONS:
1.Heat up cooking oil and pour half of the tomato and stir fry until the oil becomes red.
2. Add broth, ginger and bring them to a boiling. Then, add pepper and light soy sauce.
3. Pour the starch water into the broth. Simmer to boil again.
4. Turn up the fire and pour the whisked egg slowly. Stir the soup. Add fresh chopped scallion and coriander. Voilà!
