Recipe: Salmon Patties

These salmon patties are healthylicious for lunch or dinner.

INGREDIENTS:
- 1 cup bread crumbs
- 2 eggs, beaten
- 1/4 cup fresh parsley, chopped
- 1/4 cup chopped onions
- 1 teaspoon fresh lemon juice
- 1/4 teaspoon ground black pepper
- 400g salmon, poached
- 2 tablespoons butter

INSTRUCTIONS:
1. In a large mixing bowl, place 1 cup bread crumbs. Add eggs, parsley, onions, lemon juice and black pepper. Mix well.
2. Add salmon and mix with hands, breaking up salmon into small pieces. Form into 8 patties. Each about 1/2 inch thick.
3. In a large skillet, melt butter. Fry salmon cakes over medium heat for about 3 minutes or until golden brown and crisp. Flip and add more butter if necessary. Fry about 3 minutes on other side.
4. You can serve these salmon patties with guacamole from previous post.
