Recipe: Garlic Butter Shrimp and Quinoa (Quick and simple! 😉)

Something more savoury with quinoa? You can try this recipe. It doesn't require much effort to make this recipe. INGREDIENTS:

- 1 tablespoon olive oil
- 1/2 cup finely chopped onion
- 5 teaspoons minced garlic, divided
- 2 cups uncooked quinoa
- 1 teaspoon chili powder, divided
- 4 cups vegetable or chicken broth
- 6 tablespoons salted butter, divided
- 1 pound raw tail-on shrimp
- salt and pepper to taste
- fresh parsley for serving
- fresh lemon juice for serving

INSTRUCTIONS:

To cook quinoa
1. Heat the oil and add the onion and garlic. Sauté.
2. Add quinoa and 1/2 teaspoon chilli powder. Season with salt and pepper.
3. Add broth, bring to a boil, cover and cook for 15-20 minutes.
4. When it is ready, fluff wth a fork and toss with fresh minced parsley.

To cook prawn
1. Heat 1 tablespoon butter. Add shrimp and sprinkle 1/2 teaspoon chilli powder.
2. Season with salt and pepper and sauté.
3. Add 1 teaspoon garlic and swirl around until fragrant.

To cook sauce
1.Melt 5 tablespoons butter with 2 tablespoon of garlic.

Serve the quinoa and shrimp together in one dish, topping with fresh chopped parsley and lemon juice if desired. When the butter is melted and cooled slightly, drizzle over the shrimp and quinoa. Voilà!
