Recipe: Healthy Quinoa Fried Rice

INGREDIENTS:
- 1 cup quinoa
- 2 cups water
- 1.5 tablespoon olive oil (divided)
- 2 eggs beaten
- 1 small white onion (diced)
- 2 cloves garlic (minced)
- 1 large carrot (peeled and diced)
- 200 grams mushrooms (sliced)
- broccoli
- 1/2 cup corn
- 1/2 cup peas
- 3 tablespoons soy sauce
- salt and pepper to taste
- 2 green onions thinly sliced
- cilantro
INSTRUCTIONS:
1. Heat 1/2 tablespoon of olive oil over medium heat and add the lightly beaten eggs. Scramble them.
2. Heat the remaining 1 tablespoon of olive oil over medium high heat. Add the onion and garlic until they are fragrant and translucent.
3. Add mushrooms and broccoli. Cook until the vegetables are tender.
4. Add corn, peas, carrots, egg and cooked quinoa. Stir fry about 1-2 minutes.
5. Add soy sauce and toss them evenly.
6. Add salt and pepper to taste.
7. Remove from heat. Garnish with chopped spring onions and coriander and serve immediately.

1. Rinse the quinoa and drain. In a small saucepan, combine the quinoa with water and bring to a boil uncovered.
2. When it starts to boil, reduce the heat to the lowest setting, cover and simmer for 20 minutes or until the water is absorbed and the quinoa is light and fluffy.
