Nyonya Fish Head Curry by Signature Market

Chef Shyan is back! Today he is going to teach you how to cook an easy Nyonya dish, fish head curry🐟🍲 Nyonya style curry is one of the well-known Malaysian dishes, it is known for its spices which is the amalgamation of the diverse array of Malay, Chinese and Indian eating culture.

Ingredients:
• Salmon head
• Sea Salt
• Corn Starch
• Shallots
• Garlic
• Lemongrass
• Olive Oil
Signature Market Curry Paste
• Chicken Broth
• Long Beans
• Tau Pok
• Okra
• Eggplant
• Curry Leaves
Signature Market Organic Ginger Powder
Signature Market Organic Less Salt Soy Sauce
• Yogurt

Directions:
1. Season the cleaned salmon head with salt and add a little bit of cornstarch, then put into the air fryer for about 15 minutes (180°C).
2. Finely chop the shallots and garlic. For lemongrass, chop up the head and flatten it so that the aroma will come out.
3. In a pressure cooker or pot, add in the olive oil, shallots, garlic, and lemongrass. Give it a little stir and add in the curry paste. Cook it for 3 to 4 minutes and add the chicken broth, bring it to boil.
4. After that, add in the fried salmon head into the pressure cooker or pot, close the lid and cook for another 10 minutes.
5. Cut the okra, eggplant, long beans, and tau pok. Also, separate the curry leaves from its stem.
6. After 10 minutes, flip the salmon head to another side, add the ginger powder, a little bit of soy sauce, and all the vegetables, tau pok as well as the curry leaves into the curry.
7. Close the lid of the pot and cook the curry again for 5 minutes.
8. Then, add in about 4 tablespoons of yogurt to the curry and give it a stir. And your Nyonya Curry Fish Head is done! Enjoy!
