Healthy Pumpkin Scones by Signature Market
Halloween is just around the corner!👻🎃What is halloween without pumpkin? Here is a healthy pumpkin scones recipe for you to try and share with your family and friends during halloween💀 Happy Halloween!
🎃INGREDIENTS🎃
Pumpkin Scones
• 1 cup Signature Market Roasted Pecan Nuts (chopped)
• 2 cups White Whole Wheat Flour or Regular Whole Wheat Flour
• 1 tbsp Baking Powder
• ¼ cup Brown Sugar
• 1 tsp Signature Market Organic Cinnamon Powder
• ½ tsp Signature Market Organic Ginger Powder
• ¼ tsp Nutmeg
• ¼ tsp Cloves
• ½ tsp Sea Salt
• 5 tbsp Coconut Oil
• ¾ cup Pumpkin Puree
• ¼ cup Milk of choice (almond milk, low-fat milk, etc.)
• ½ tsp Vanilla Powder/Extract
Maple Glaze
• 2 tbsps Signature Market Organic Raw Cane Sugar (powdered)
• ¼ tsp Sea Salt
• 1 tbsp Coconut Oil
• ½ tsp Vanilla Powder/Extract
• ¼ cup Maple Syrup
🎃DIRECTIONS🎃
1. In a mixing bowl, combine the flour, ¾ths of the chopped nuts, baking powder, brown sugar, spices, and sea salt and whisk together.
2. Stir in the pumpkin puree, milk, coconut oil, and vanilla powder/extract. Mix all the ingredients together until the wet and dry ingredients are thoroughly incorporated. Use your hands to knead the last of the flour into the dough.
3. Form the dough into a circle then use a knife to cut into 8 even slices.
4. Separate the slices and place them on the baking pan lined with parchment paper. Bake for about 20-25 minutes or until lightly golden brown.
5. While the scones are baking, in a small bowl, whisk together the powdered sugar, sea salt, coconut oil, vanilla powder, and maple syrup until smooth and creamy. Drizzle the glaze generously over the scones. While the glaze is wet, sprinkle it with the remaining chopped pecans. Enjoy!
