Dairy-Free Cheesecake by Signature Market

Ingredients:
• ¾ cup Signature Market Roasted California Walnut
• ½ cup Signature Market Roasted California Almond
• 1 cup Signature Market Dried Red Dates (pitted)
• ½ tsp Vanilla Powder or Extract
• Pinch of Sea Salt
• Splash of water (if needed to help blend)
• 2¼ cup Signature Market Raw Cashews (soaked overnight)
• ¼ cup Maple Syrup or Honey
• 2 tsp Vanilla Powder or Extract
• 1/3 cup Coconut Oil (melted)
• 1 cup Blueberries (or any fruits)

Directions:
1. Add in the walnuts and almonds then blend them together until fine. After that, add in the pitted red dates and blend them all once again until fine.
2. Add in the salt, vanilla powder, and a little bit of water (if needed), then blend all the ingredients.
3. Prepare a baking tray/mold. Put in the mixture to the tray/mold and flatten it. Chill in the fridge for about 20 minutes.
4. Add the soaked cashew nuts into the blender or food processor and blend it all until paste-like consistency.
5. Add in the maple syrup, vanilla powder, coconut oil, and water (if needed) to the cashew mixture and blend them all together.
6. Take out the chilled crust layer and add some of the cashew mixture and flatten it. Save some of the cashew mixture for later and separate it into two portions.
7. Mix the first portion with blueberries and blend until fine. Add in the blueberries layer on top of the cashew nut layer. Press and lay the blueberries mixture til flat. Repeat these steps for the second layer, but with strawberries.
8. Garnish the cheesecake with fruits and put in the freezer for 3 hours to let the cheesecake firm and then the cheesecake is ready to serve!
